Vinification: The Brunello (Sangiovese) grapes are hand-picked from 27 September to 5 October from the Fiesole, Poderuccio and Podernuovo vineyards. The grapes are selected several times; firstly in the vineyard, on the selection table at the winery where the bunches are de-stemmed and the individual grapes are chosen. Fermentation without addition of yeasts and maceration in open temperature-controlled conical vats for 3 to 4 weeks. The Brunello is aged in oak barrels for about 42 months and 6 months bottles in bottle.
