Sourced from the Estate’s oldest Cortese vines, averaging over 60 years, these are among the oldest within the appellation. Very low yields - ranging from 70 to 50 quintals per hectare. Vines are located on the hills surrounding the Villa La Scolca. Hand harvested fruit is brought to the winery after 5 - 10 mins and sprayed with dry ice. Cryo-maceration, cold fermentation in stainless steel tanks and the use of natural yeasts preserves the Cortese’s subtle fruit. The young wine remains in tank on it’s lees for 9 months before natural decanting and bottling.
