Casanova di Neri
Grape Varieties :
The crown in the Casanova di Neri range produced only in the best years from the very best grapes. In total, the production of a single vintage of Cerretalto takes a minimum of 6 years. The Sangiovese (Brunello) grapes are hand picked from the famous single vineyard ‘Cerretalto’ in October. On arrival at the winery, the grapes undergo rigorous selection on the sorting table with every imperfect grape discarded. Fermentation vats are filled by gravity. Fermentation takes place without the use of yeast additives and maceration in open conical vats at controlled temperatures for 3 to 4 weeks. The wine is aged in oak barrels for around 31 months and a further 30 months in bottle.
