50% Grenache, 30% Syrah and 20% Mourvèdre. The grapes are manually harvested and partially destemmed. On arrival at the winery, they undergo a pre-fermentation cold maceration for 3 to 5 days at 8°. After a gently, low pressure pressing with a pneumatic press, the must is fermented for 21 to 28 days at temperatures of 24° to 28° in concrete tanks. The wine remains here for ageing for 18 to 24 months. After the final assemblage is made the wine is bottled and spends a further 6 months in bottle before release.
