Produced only in the best vintages from a careful selection of Corvina (80%), Rondinella (10%) and Oseleta (10%) grapes taken from the oldest vineyards in Zenato's Costalunga estate in Sant'Ambrogio di Valpolicella. The average age of the vines is 20 years. The particularly low yields produce a wine of great concentration with rich aromas of vanilla and fruits. The grapes are hand harvested in the first ten days of October. They are then left to raisin (dry) for 3 to 4 months in small trays in dedicated warehouses maximising air circulation. In January, the grapes are then de-stemmed, pressed and macerated on the skins. Fermentation lasts for 15 to 20 days with full skin contact and the wine is then aged for 48 months in 75 hectolitre Slavonian oak barrels. The wine finally spends 1 year in bottle before release.
