Maceration under controlled temperature 28°C in steel tanks for 12-20 days using indigenous yeasts. Malolactic fermentation in steel tanks. Aged for 15 months in tonneaux and blending for 6 months in large oak barrels (23-32h/l), followed by 12 months refinement in bottle before release.
