The vineyards are situated in the Cabriéres Quarter of this appellation on north facing slopes bathed in a warm, dry climate. The grapes are carefully selected by hand then fermented in tanks for 20 to 25 days at controlled temperatures. They are aged in vats and then transferred to large oak ‘foudres’ and aged for 2 to 3 years before bottling and release.
