The different grape varieties (45% Cabernet Sauvignon, 15% Cabernet Franc & 25% Merlot) are vinified separately; fermentation and maceration take place in stainless steel tanks for about 20/25 days at a controlled temperature of 28-30°C. The wine is then transferred into new and one year used 225L French oak barriques (Allier & Troncais) where malolatic fermentation is completed. It is then aged for 12 months in barriques and after blending, a further nine months in bottle.
