Grape Varieties :
The Sangiovese Grosso and a small amount of Colorino grapes are hand picked from Casanova di Neri’s ‘Cetine’ vineyards to the South of Montalcino. The grapes are de-stemmed and the vats are filled by gravity at the winery.
Fermentation takes place spontaneously without the use of yeast additives and maceration in open conical vats at controlled temperatures for 3 to 4 weeks. The wine is aged in oak barrels for around 42 months and 6 months in bottle.
