Grape Varieties :
The Glera grapes are cultivated using organically certified methods from a group of specifically chosen vineyards in the Valdobbiadene DOCG area.
The grapes are harvested manually generally in September at medium ripeness in order to preserve their acidic structure.
Once they reach the winery, they are gently pressed and the ‘free run’ must immediately starts the sparkling process in autoclave (the Charmat method) with the use of specific yeasts.
The sparkling wine is bottled in January.
