Light and fresh with notes of Mediterranean fruits such as melon and prickly pears. This is a typical Chardonnay with immediate notes of toasted fresh bread, rusks, and honeyed white flowers.

Vinification: The grapes are picked at night when fully mature from 10 year old, south-east facing vines in the Côtes du Thôngue VDP appellation. On arrival at the winery, they are de-stalked and slowly pressed with pneumatic presses. Fermentation takes place in tanks at controlled temperatures. The wine is then aged and stirred on the lees for 2 to 4 months before filtration and bottling.
