The Verdicchio grapes are picked by hand during the coolest hours and placed into small boxes. The whole clusters are left to cool in cold storage.
The Montepulciano clusters are hand harvested separately then pressed on arrival at the winery after previous cooling.
Both musts are fermented at low temperatures before final blending and bottling in the Spring and the wine slowly acquires effervescence remaining on the ‘lees’ for at least 36 months.
The wine is also made of small amounts of different vintages of Vigna Novali as well as Verdicchio spirits that have been aged in old barriques for a minimum of 8 years.
The liqueur d’expedition is the true key to the style and taste of the Cuvée.
The wine matures for at least 6 months in bottle after dégorgement.
