The Fiano grapes come from the Santo Stefano del Sole vineyard with a South-West exposure and a sandy, deep, rich in mineral soil. Espalier with guyot pruning training system. Vines are an average of 15 years. The grapes are harvested by hand at the end of October. Classic white vinification in stainless steel tanks at controlled temperatures. Refines for 3 to 4 months in bottle before release.
