The hand harvested and carefully selected grapes are softly pressed by a pneumatic press. The obtained free run juice then ferments for about 20 days at the temperature of 18 °C. When the wine is finished and matured for a few months, it is bottled under sterile conditions, after micro-filtration in the modern equipment of the winery.
