The grapes for Noe (40% Grechetto, 30% Trebbiano & 30% Pinot Gris) are handpicked in mid-September from different vineyards in Umbria on the border between Tuscany and Northern Lazio within the Orvieto DOP. The vineyards are situated 450 metres above sea level on the famous, volcanic 'Calanchi' hills.
Fermentation is carried out in steel vats with an average temperature of 15° C. The wines are matured in steel vats for 5 months before the final blend is made and the wine is refined in bottle for approximately one month.
