The 5 different local grape varieties are harvested from vineyards belonging to the Trappolini Estate and to local growers whose vineyards surround the property. The grapes are vinified traditionally, on arrival at the winery where they are immediately lightly pressed. There follows alcoholic fermentation of the must and static clarification at low temperatures in stainless steel tanks. Once fermentation is complete, the wine is stored in tank for a few months before clarification & stabilisation.
