Grape Varieties :
The grapes are hand harvested from 25 year old vineyards in the second half of October. The grapes then undergo 17 days of maceration during which traditional fermentation is held at 30° C. Malolactic fermentation takes place spontaneously. The wine is then transferred to American oak casks for 24 months before unfiltered bottling.
