This wine was made with 100% Merlot grapes grown on the Santa Ana Estate in the Maipo Valley. The grapes were harvested at optimum ripeness and then selected for this wine. The wine is intense red in colour with violet hues. The aromas are fresh and bursting with fruit, such as blackberries and blueberries, intermingled with spices, like black pepper and cloves. On the palate has medium-structured with rounded tannins and rich in fruit flavours. This wine pairs well with meat, spicy casserole dishes, pasta and cheese.

Grape Varieties : Merlot

Vinification: The Merlot grapes were hand-harvested from 25-year-old vines in Maipo and placed into 500-kilo bins. On arrival at the winery, they were then destemmed and gently crushed. The must was cooled and macerated with the skins prior to fermentation, at a temperature of 5º C. for a period of 3 to 5 days. Fermentation takes place in stainless steel tanks at temperatures varying between 28ºC and 30ºC for a period of 7 to 10 days. Next the must was macerated with the skins for 7-10 days. This wine was aged in French oak barrels for 10 months.

Note: The Sibaris range is named after the Ancient Greek city of ‘Sibaris’, which was located in Magna Grecia, today’s Southern Italy. The city amassed great wealth thanks to the fertile land and busy port and its inhabitants (Sybarites) became a byword for hedonism and opulent luxury rather like the modern day ‘Bon Vivant’. Undurraga dedicate this sophisticated range to all those who enjoy the good life and regard life as one long search for pleasure. Sibaris is hot on the heels of the T.H wines in terms of awards, the Chardonnay has just picked up Gold medals at the Concours Mondial de Bruxelles 2016 as has the Carménère which also scooped Gold at the IWSC 2015 going on to win the overall Carménère Trophy. The Sauvignon Blanc too won a Gold Medal and a Regional Trophy at the 2015 Decanter World Wine Awards.
