On arrival at the winery, the grapes are lightly pressed and the juice is allowed to settle for 24 hours before fermentation begins in temperature-controlled tanks. The alcohol fermentation is followed by the secondary, or malolactic fermentation, which softens the overall acidity. The wine then matures in tanks for 6-8 months before bottling.
