The grapes are hand harvested and gently de-stemmed. Fermentation takes place at controlled temperatures of 23 degrees on the skins for 15 days. Malolactic fermentation occurs with 70% of the wine in barriques & 30% in steel tanks. Maturation follows the same structure for 10 months with some in barriques and some in steel.
