The Insolia gapes are hand picked from the Salemi and Monreale vineyards, located at an altitude of 250 metres above sea level.
Cold fermentation in contact with skins and successive static clarification. Fermentation in 20 hectolitre barrels and a period of around six months on the lees of fermentation followed by fining in the bottle.
