The Carricante grapes are hand harvested from 15 year old vines in the last two weeks of October. After a light pressing on arrival at the winery, the must undergoes cold decanting and fermentation at low temperatures. The wine is stored on its ‘lees’ for 4 months before a final fining and bottling.
