The grapes are handpicked at full ripeness from 15 year old vines. Complete destemming, cold soak pre fermentation and traditional alcoholic fermentation in stainless steel vats for 20 to 30 days at controlled temperatures. Maceration lasts about 20 days, then the wine is aged in stainless steel vats for 6 months and then in oak barrels.
