Vinification: The grapes are harvested throughout September from 25 to 35 year old vines located in Eppan. The grape clusters are destemmed and fermented separately according to varietal in small oak barrique and tonneaux. Malolactic fermentation and ageing on the 'lees' in barrique for 1 year. The final blend is then made, followed by another 3 years maturation, on the lees, in stainless steel tank.
