The Cabernet Sauvignon grapes are hand harvested in the first week of October. They are then removed from their stalks, gently crushed and the must is fermented at controlled temperatures of 26-28ºC while in contact with the skin, for 15 days. Ageing in oak lasts about 16 months followed by refining in the bottle for a further 6 months.
