A total of 6 grape varieties make up the Rosso Moschioni - Refosco (30%), Tazzelenghe (20%), Merlot (20%), Cabernet Sauvignon (20%), Pignolo (5%) and Schioppettino (5%).
Each grape variety is fermented separately without the addition of yeasts. The maceration period varies according on the grape but on average for about 15 to 25 days. The wines undergo spontaneous malolactic fermentation with natural decantation and transferred to barrique (20 and 30hl barrels) for approximately 12 months before the final blend is made and transferred into 50hl oak barrels for a further year.
After a total period of three years, the wine is bottle-aged without filtering for a period of at least 6 months prior to being released for sale.
