After crushing and de-stemming, the wine is cold macerated on the skins for 36 hours. The must is separated by gravity and is poured off, also at low temperatures, leaving it ready for the start of the alcoholic fermentation. This takes place at 14ºC for some 20 days, after which batonage is employed with fine lees in tank and a final racking before fining and bottling.
