The Plavac Mali grapes are harvested from vines in the Hvar Island on the stunning Dalmatian Coast of Croatia. The South facing vines are aged between 10 to 60 years old yielding 1.3kg per vine. The grapes are handpicked and delicately processed as soon as possible on arrival at the winery. The grapes are macerated for roughly 5 to 7 days to obtain maximum colour extraction and characteristic aromas. After fermentation (with selected yeasts), the young wine is stabilised in tank and prepared for maturing. 50% of the wine is matured in oak barrels for 5 months. The wine undergoes micro-filtration before bottling to ensure product stability.
