The clayey-limestone slopes of the AOC Corbières and the Mediterranean climate, sunny and windy, give this Rosé great typicity and character.
50% Syrah, 25% Mourvedre and 25% Grenache Noir grapes are harvested in mid-September at their aromatic peak. The Mourvedre is harvested first, followed by Syrah and then the Grenache.
Each grape variety is processed separately. The Syrah and Mourvedre are directly pressed to obtain fresh, clear juice. The Grenache Noir is produced using the Saignée (bleeding) Method. The grape must macerates for 2 to 3 hours on the skins before being separated from the juice allowing a rich, deep pink colour to develop.
The three grape varieties are blended just before bottling and the wine is unaged as it is best drunk young.
