Vinification
The classic white wine from Piedmont. The Cortese grapes are harvested and immediately vinified in the last weeks of September/early weeks of October. The must is immediately separated from the skins with soft pressure. The juice obtained, after cold static clarification, is then fermented in stainless steel tanks at controlled temperatures of between 16 to 18 degrees for 7 to 8 days. The wine then remains in tank for clarification, stabilisation & filtration. The wine is then bottled and released 3 to 4 months later.

Tasting Notes
Pale yellow in colour with green reflections. Intensely fruity bouquet with notes of peaches and apricots. Fresh and pleasant to taste.
Rich in body with a persistent length.
Great as an aperitif, best with light antipasti and fish dishes. 12% vol. |
