Vinification
The grapes are picked up by hand, de-stemmed and placed in a pneumatic press, where they are cold macerated for approximately 12 hours. Once the juice has been extracted, it is clarified by natural static sedimentation and fermented under controlled conditions in stainless steel tanks at 15°C with selected yeasts. The young wine is matured on the fine lees for around 4 months before it is prepared for the bottling.

	Tasting Notes Light rosé (red onion skin) with a very delicate nose of acacia flowers and minerals. Good structure, nice acidity and long on the finish. 12.5%vol
