The most traditional of the Gavi wines from La Scolca and considered perhaps the everyday, affordable alternative to the legendary ‘Black Label’. Vinified from grapes from the younger vineyards located in the heart of Rovereto, known internationally as the ‘Gran Cru of Gavi’. The grapes are hand harvested and immediately transferred to the winery. Cryo-maceration, cold fermentation (13-14°) in stainless steel tanks and the use of natural yeasts preserves the Cortese’s subtle fruit, flinty acidity and structure.The young wine remains in tank on its lees for 4 to 5 months to extract aromatic richness and palate complexity, before natural decanting and bottling.
