The grapes come from carefully selected vineyards situated at an altitude of 200 m a.s.l. Fermentation and maceration in contact with the skins is carried out in stainless steel tanks for about 28-30 days at a controlled temperature of 28-30°C. The wine is transferred into 225L barrels of French oak (Allier and Troncais) where malolactic fermentation is completed. The wine is aged for 24 months in barriques and then for at least 12 months in bottle before release.
