Vinification: The Cabernet Sauvignon grapes are selected rigorously, in the vineyards in Montalcino by hand and then on the selection table at the winery where individual grapes are selected and de-stemmed from the bunches on arrival at the winery. A profound red wine with a complex, aromatic bouquet, faithfully expressing the uniqueness of the terroir with its rich flavours and fulsome, blended tannins. A particularly elegant wine with great finesse, the fruit of a great vintage that allowed the harvest of grapes with the perfect level of ripeness. Fermentation vats filled by gravity. Fermentation without use of yeast additives and maceration in open conical vats at controlled temperatures for 2 to 3 weeks. The wine is aged in oak barrels for around 19 months and 6 months in bottles.
