For the Soldati Brut Millesimato, the 100% Cortese grapes are harvested from hillside vineyards within the Gavi DOCG.
The base wine is fermented using traditional methods and the wine is then transferred to bottle where the secondary fermentation begins according to traditional champenoise method. The wine matures on the ‘lees’ for more than 72 months before dégorgement.
Produced only in the best vintages in limited quantities.
