50% Grenache, 30% Syrah, 15% Carignan and 5% Cinsault.
The various grape parcels are harvested manually and mechanically. On arrival at the winery, the grapes are completely destemmed with all stalks and leaves removed entirely. The are macerated for 15-20 days at temperatures of 24° to 28°. The grapes then pressed pneumatically at low pressure. After fermentation the wine is aged in concrete tanks for 10 to 12 months after which the final blend is made and the finished wine is bottled. It spends a further 2-3 months in bottle before release.
