The Schioppettino or Ribolla Nera grapes are manually harvested from a South Easterly facing vineyard named ‘Variant’ (with a clayey, flysch soil type). Fermentation in wood barrels with manual pressing and without the addition of yeasts other than its own. Aged in 80% new barriques & 20% second use barriques for 15 months, with a further 12 months in large oak barrels and then 6 to 8 months in tank for natural racking. The wine is not filtered before bottling.
