Manual and mechanical harvesting, stemming. Maceration of 15 to 20 days at controlled temperature (24° to 28°). Pneumatic pressing at low pressure (less than 1 bar). Ageing of 10 to 12 months in concrete tank. Bottled with extra 2 to 3 months of ageing before release.
