Vinification: The grapes are harvested from medium altitude hills in the Parteolla region. Stemming and crushing followed by a soft pressing. The obtained must is decanted for 12 hours. The must is then inoculated with selected yeasts and fermentation takes place at a temperature of 14C for about 12 days. After fermentation, the wine is left on its fine lees for a short time and then it can be bottled.
