Light straw yellow in colour with delicate greenish highlights. Intense, long, continuous, lasting with flavours varying from fruitiness to floral depending on the stage of its evolution. Strong on the palate, typical of Gavi. Flinty with walnut and toasted almond on the finish.

Vinification:

A superb example of how Gavi can age, this wine is only produced in the best years using the best grapes from vineyards some of which are over 60 years of age.Hand harvested from vineyards with less than 50 q/ha depending on the vintage. The Cortese grapes are transferred to the winery immediately and sprayed with dry ice. Cryo-maceration, cold fermentation in stainless steel tanks and the use of natural yeasts preserves the Cortese character. Demonstrating the incredible ageing potential of Gavi, the wine will then be aged in stainless steel tank for a total of 10 years prior to bottling and release.
