A wine showing clear floral and red-fruit characteristics. The nose presents Morello cherry, Marasca cherry, plum and wild berry notes, with light spicy nuances. The palate is dry, medium- to full-bodied and well-structured, supported by balanced acidity and soft, integrated tannins. The finish is clean and persistent. Suitable pairings include earthy pasta dishes, roasted and grilled red meats and aged cheeses.

Vinification:

The Irpinia Aglianico PDO “Tau Red” is an intense ruby red wine produced from high-quality Aglianico grapes grown on mixed soils and trained using the spurred cordon system. The vineyard has a density of 5,000 vines per hectare, and the harvest occurs between late October and early November, yielding about 80 quintals per hectare under optimal conditions. After harvesting, the wine is matured for four months in French barrique and then aged in the bottle for 6–8 months, a process that enhances its structure, elegance, and complexity.
